PTFE (Teflon)
What it is
PTFE (polytetrafluoroethylene) is the synthetic fluoropolymer plastic better known by DuPont's old trade name Teflon — it's the slick coating baked onto nonstick pots, pans, waffle irons, and bakeware, and it also turns up in plumbing thread tape, some dental floss coatings, and industrial gaskets and seals. It's built from long chains of carbon bonded to fluorine, one of the most stable bonds in organic chemistry, which is why food releases easily and why the material itself doesn't react with what's cooked in it. PTFE is a finished polymer, not to be confused with PFOA, a separate manufacturing chemical once used to help produce it, or with "PFAS," the broad umbrella category of thousands of fluorinated chemicals that both PTFE and PFOA technically belong to but which behave very differently from each other. Most people encounter it as the dark nonstick layer on a skillet, sold under names like Teflon or simply "nonstick coating."
Why it's flagged
PTFE gets pulled into health scares for two genuinely different reasons that are worth separating. The first is historical: until 2013, U.S. and European manufacturers used PFOA (perfluorooctanoic acid) as a processing aid to make PTFE; PFOA built up in blood and drinking water near manufacturing plants, and in 2023 the International Agency for Research on Cancer (IARC) upgraded it to "carcinogenic to humans" (Group 1), citing evidence for kidney and testicular cancer — this is the chemical at the center of the "Teflon Toxin"/C8 lawsuits against DuPont. That finding is real and serious, but it concerns the manufacturing aid, not the finished PTFE plastic, and it predates a coordinated phase-out: under the EPA's 2010/2015 PFOA Stewardship Program, the eight major PFAS/fluoropolymer makers that joined the program state they eliminated PFOA from their U.S. production and imports by 2015. The second, unrelated issue is heat: intact PTFE is chemically inert at normal stovetop temperatures, but above roughly 260°C (500°F) — an empty pan left on high heat, for instance — the coating begins to break down and release fumes that cause "polymer fume fever," nicknamed "Teflon flu," a self-limiting flu-like illness in people that resolves in a day or two, and that can kill pet birds within minutes due to their extremely sensitive respiratory systems.
How concerned to be
For its dominant real-world use — cookware, used as intended — PTFE lands honestly in "generally fine," not "avoid," and conflating it with PFOA or with PFAS broadly is the actual accuracy error to watch for. The FDA authorizes PTFE-type fluoropolymer resins for repeated food contact under 21 CFR 177.1550, with specific extractability limits. PTFE's very high molecular weight and chemical inertness keep it from crossing cell membranes or leaching into food, which is the basis of the OECD's "polymer of low concern" framework; a 2018 peer-reviewed review (authored by scientists affiliated with DuPont/Chemours and 3M, so industry-funded rather than independent) concluded fluoropolymers including PTFE satisfy that framework's criteria, supporting the view that PTFE doesn't share the exposure pathway of small-molecule PFAS like PFOA — though given the funding source, this shouldn't be read as neutral third-party confirmation. The PFOA-contamination chapter is real but resolved for cookware sold today: essentially all major nonstick brands have been PFOA-free since 2013, so "PFOA-free" labeling on current Teflon products is accurate, not marketing spin. The one caveat worth keeping in practice is about misuse, not the material itself: never preheat an empty nonstick pan, avoid prolonged high or broiler-level heat, keep the kitchen ventilated, and retire cookware once the coating is scratched or flaking, since overheated or damaged coating is where the documented risk — Teflon flu in people, and genuine lethality to pet birds — actually shows up. A minority of researchers (e.g., a 2020 Environmental Science & Technology commentary) argue the "low concern" label deserves more scrutiny since fluoropolymers are technically part of the broader PFAS family, production is linked to other PFAS processing aids and emissions, and trace processing residues are possible; that's a fair open scientific debate to note — and a useful counterweight to the industry-funded PLC review above — but it hasn't changed the regulatory or safety consensus on finished PTFE cookware used at normal temperatures.

Look for any of these on an ingredient list: Teflon, Polytetrafluoroethylene, Fluoropolymer, PTFE resin, PTFE, Nonstick coating (PTFE).
